- Three tablespoons of unflavored gelatin
- 1/2 cup cold water (for blooming the gelatin)
- 1 1/2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 cup water
- One teaspoon of vanilla extract
- Powdered sugar (for dusting)
Instructions
- In a stand mixer bowl, sprinkle the gelatin over 1/2 cup cold water and let it sit for 5 minutes to bloom.
- Combine granulated sugar, corn syrup, and 1/4 cup water in a saucepan. Heat over medium-high heat until it reaches 240°F (115°C) on a candy thermometer.
- With the mixer on low speed, slowly pour the hot syrup into the gelatin mixture. Gradually increase the speed to high and beat for 8-10 minutes until thick and fluffy.
- Add vanilla extract and beat for another minute to combine.
- Grease a square baking pan and dust with powdered sugar. Pour the marshmallow mixture into the pan and smooth the top.
- Let it set at room temperature for at least 4 hours or overnight.
- Once set, cut the marshmallows into squares and toss them in powdered sugar to prevent sticking.
Notes
To make these marshmallows vegan, substitute the gelatin with agar powder and follow the same process. Add different extracts or food coloring to customize the taste and look if you prefer flavored marshmallows.
