Description

These fluffy gluten-free pancakes are perfect for breakfast or brunch. They’re easy to make, and you can customize them with your favorite toppings like fresh fruit, chocolate chips, or syrup.


Ingredients

  • 1 1/2 cups gluten-free flour blend
  • Two tablespoons sugar
  • One tablespoon of baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk (or dairy-free alternative)
  • Two large eggs
  • Three tablespoons melted butter (or oil)
  • One teaspoon of vanilla extract

Instructions

  1. Whisk together the gluten-free flour, sugar, baking powder, and salt in a large bowl.
  2. Whisk together the milk, eggs, melted butter, and vanilla extract in another bowl.
  3. Pour the wet ingredients into the dry ingredients and whisk until smooth, but don’t overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  6. Serve hot with your favorite toppings.
