  • 1 lb shrimp (peeled and deveined)
  • Four tablespoons butter (or dairy-free alternative)
  • Three cloves garlic (minced)
  • Zest and juice of 1 lemon
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Cook the gluten-free spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add shrimp to the skillet and cook for 3-4 minutes per side until pink and opaque.
  4. Stir in lemon juice, lemon zest, salt, and pepper. Toss to combine.
  5. Add the cooked spaghetti to the skillet and toss with the shrimp and lemon garlic sauce.
  6. Garnish with fresh parsley and serve immediately.

Notes
