- Two tablespoons sugar
- One teaspoon of xanthan gum
- Two teaspoons of baking powder
- One teaspoon salt
- 1 cup warm milk (or dairy-free alternative)
- 1/4 cup melted butter (or coconut oil)
- One large egg
Filling:
- 1/2 cup brown sugar
- Two tablespoons cinnamon
- 1/4 cup melted butter
Icing:
- 4 oz cream cheese (or dairy-free alternative)
- 1/2 cup powdered sugar
- Two tablespoons milk (or dairy-free alternative)
- One teaspoon of vanilla extract
Instructions
- Combine gluten-free blend, almond flour, sugar, xanthan gum, baking powder, and salt in a large mixing bowl.
- Mix warm milk, melted butter, and egg until a soft dough forms.
- Roll the dough out between two sheets of parchment paper.
- Brush with melted butter and sprinkle with the cinnamon-sugar filling.
- Roll the dough into a log, slice, and place in a greased baking dish.
- Let the rolls rise for 30-45 minutes, then bake at 350°F (175°C) for 20-25 minutes.
- While baking, prepare the icing. Spread over warm rolls and serve.
