Description

These gluten-free cinnamon rolls are soft and fluffy and filled with a rich cinnamon-sugar mixture. Topped with cream cheese icing, they make the perfect indulgent treat.


Ingredients

Dough:

  • 2 cups gluten-free flour blend
  • 1/4 cup almond flour
  • Two tablespoons sugar
  • One teaspoon of xanthan gum
  • Two teaspoons of baking powder
  • One teaspoon salt
  • 1 cup warm milk (or dairy-free alternative)
  • 1/4 cup melted butter (or coconut oil)
  • One large egg

Filling:

  • 1/2 cup brown sugar
  • Two tablespoons cinnamon
  • 1/4 cup melted butter

Icing:

  • 4 oz cream cheese (or dairy-free alternative)
  • 1/2 cup powdered sugar
  • Two tablespoons milk (or dairy-free alternative)
  • One teaspoon of vanilla extract

Instructions

  1. Combine gluten-free blend, almond flour, sugar, xanthan gum, baking powder, and salt in a large mixing bowl.
  2. Mix warm milk, melted butter, and egg until a soft dough forms.
  3. Roll the dough out between two sheets of parchment paper.
  4. Brush with melted butter and sprinkle with the cinnamon-sugar filling.
  5. Roll the dough into a log, slice, and place in a greased baking dish.
  6. Let the rolls rise for 30-45 minutes, then bake at 350°F (175°C) for 20-25 minutes.
  7. While baking, prepare the icing. Spread over warm rolls and serve.
