Instructions
- Preheat the oven to 350°F (175°C)—grease and flour two 8-inch round cake pans.
- Whisk together the gluten-free flour blend, almond flour, baking powder, baking soda, xanthan gum, and salt in a large bowl.
- In a separate bowl, beat the eggs and sugar until light and fluffy. Slowly add the oil and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
