Instructions

  1. Preheat the oven to 350°F (175°C)—grease and flour two 8-inch round cake pans.
  2. Whisk together the gluten-free flour blend, almond flour, baking powder, baking soda, xanthan gum, and salt in a large bowl.
  3. In a separate bowl, beat the eggs and sugar until light and fluffy. Slowly add the oil and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes clean.
