Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, xanthan gum (if using), and salt.
  3. Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  4. Gradually stir in the buttermilk with a fork until the dough comes together. Avoid overmixing.
  5. Turn the dough onto a lightly floured surface and pat it into a 1-inch thick rectangle.
  6. Use a biscuit cutter or the rim of a glass to cut out biscuits, pressing straight down without twisting.
